After harvesting, they are taken to the mill where the production process begins, in which the olives are converted into oil using the cold extraction technique. Extra virgin olive oil is extracted from the stone fruits of the olive tree, which are actually olives. The fruits are harvested, in our case by manual harvesting with the help of mechanical aids, and transferred to the mill. Then the olives are separated from leaves and any residues and crushed with a hammer crusher that crushes them and turns them into a paste. In this phase, the oil droplets present in the cells of the olive pulp come out and flow into the paste.
