Pennoni Rigati is a larger version of the classic penne and, thanks to their size, can optimally absorb the spices.

The term penne in the Italian language refers to the goose quill, formerly used for writing, which was cut at an angle to obtain a tip with a thin line. The format, obtained from a smooth or striped tube of pasta of variable length, has the characteristic diagonal cut typical of the pen.

Penne is one of the few pasta shapes with a definite date of birth: in 1865 a pasta maker from San Martino d'Albaro (Genoa), Giovanni Battista Capurro, applied for and was granted a patent for a diagonal cutting machine. The patent was important because it made it possible to cut fresh pasta into sticks without crushing them, in a format variable between 3 and 5 centimeters (half penne or penne). We read in the document, preserved in the Central State Archives of Rome: "Until now, it has not been possible to make the diagonal cut using only hand scissors, a method that is not only too slow and expensive but also has the disadvantage that it can be made an irregular cut and crush the pastes ".
