The Caputo grinder (Naples, since 1924) has developed Alba flour especially for pastries and sweet yeast dough: brioches, doughnuts, croissants and puff pastries. The extra-fine Tipo-00 grinding creates an elastic dough that rises evenly and gives a light, delicate crumb.
