Dry yeast, also called "Criscito", is a natural product obtained by kneading soft wheat flour of type "0" and water, acidified by a complex of yeasts and lactic acid bacteria and is able to start the fermentation of product doughs in the bakery and pastry shop.
As it becomes no longer active when drying, Criscito must be reactivated by using an active yeast in the dough as it is normally used. Per kilo of flour, 20 to 50 grams are added in addition to normal yeast.
With this product, you can finally easily get naturally leavened (mixed) baked goods: no refreshments, days waiting times, no more preservation problems. They improve the quality properties of your baked goods: more pleasant taste and aroma, preservation and more digestibility.
