Italian flour for dumplings, pasta and noodles Caputo Pasta Fresca & Gnocchi. Pierogi are the flagship of Polish cuisine. They are also popular with Italians whose pierogi look very different: they are much smaller and have different fillings. However, Polish and Italian pierogi have one thing in common: the dough should be soft, yet elastic and can be rolled out thinly. At the same time, it must not be torn or pierced when sticking together.

For this reason, the Italian company Caputo has developed a special flour for dumplings. Caputo Pasta Fresca & Gnocchi is a flour with high protein content, i.e. gluten. This flour contains 13 percent of it. This results in an elastic dough that easily absorbs water or eggs and is easy to roll out. The strength of the dumpling flour is W 260/260. The highest quality of Italian wheat results in excellent dumpling flour.

Caputo dumpling flour is a type 00 flour - that is, it is white, free from impurities in the form of bran and grain residue after grinding. In Poland, the typical flour type is 450-550, i.e. it is flours that contain more fibre, bran and minerals. The higher the flour type, the healthier the flour, but its cooking properties are less favorable.
