For 12 people - celebrate Christmas with your family and prepare the Neapolitan pastiera for them
Cream recipe: pour the boiled wheat into a pan and add 100 g milk and 30 g grated lemon. Heat for about 10 minutes while stirring, until it becomes creamy. Separately mix 700g fresh ricotta, 600g sugar, 5 whole eggs and 2 egg yolks, 1 packet of vanilla (if you wish, 1 bottle of orange blossom water and a pinch of cinnamon or a bottle of millefiori). Process everything until creamy. Add a grated lemon, 10g of diced lemon.
For shortdough: prepare the shortcrust dough from 500 g flour for desserts, 3 whole eggs, 200 g sugar, 200 g butter and a teaspoon of honey. Mix everything without processing too much, spread and cover with a cake pan or several small cake tins, distribute the cream mixture evenly in it.
Decorate the pastiera with shortcrust dough strips and on low heat for approx. Bake in the oven for 1 hour until the pastiera turns amber. Finally, sprinkle with powdered sugarIngredients wheat, water, salt, acidity regulator
