The orecchiette are one of the most typical formats of Apulian cuisine. Their special name has been modified from the word "strascicati" or strasicinati" meaning drawn. Its shape resembles a small disc that is slightly curved in the middle. According to the Apulian tradition, the orecchiette is preferably cooked together with broccoli or potatoes in salt water. Of course, these also fit with tomato sauce, pecorino cheese or oil and garlic.
