The cites, also known locally as Boccolotti, originate from southern Italy, especially from the Neapolitan territory. They have an oblong, round, perforated shape, a diameter of 7 mm, and are between 1.10 and 1.20 mm thick. The cites, as well as di candele, are broken into irregular pieces before cooking. The zite are ideal for oven dishes, but can also be prepared tasty sauces: with meat or fish sauces, with heavily seasoned sauces, or with tasty cheeses such as pecorino, provolone, or caciocavallo. Vegetarian, they also taste excellent, e.g. with vegetable tomato sauces, with hot peppers, eggplant and courgettes. Ingredients: durum wheat semolina pasta. Ingredients: wheat semolina.
