The classic, low-profile panettone, crafted according to the Piedmontese tradition.
A soft, naturally leavened dough—risen for over two days using only sourdough starter—enriched with fragrant candied orange peel, Calabrian citron, and plump sultana raisins. It is topped with a crunchy, artisanal glaze made from the finest whole Italian hazelnuts, then cooled naturally upside down for over 8 hours, just as tradition dictates.

INGREDIENTS: "Type 0" soft wheat flour, sultana raisins 14%, hazelnut glaze 12% (sugar, fresh egg white 22.8%, hazelnuts 16.9%, rice starch, rice flour), butter, sugar, fresh egg yolk 8%, candied orange peel 6.2% (orange peel, glucose-fructose syrup, sugar), natural sourdough starter 6% (wheat flour, water), candied citron 1% (citron, glucose-fructose syrup, sugar), honey 0.9%, emulsifiers: mono- and diglycerides of fatty acids (of vegetable origin); fresh pasteurized whole milk 0.6%, salt, natural flavorings.
