Originally from Lombardy and Emilia, the Farfalle got their name from the typical butterfly shape with small narrow galls in the middle. For Farfalle we recommend delicate dips: butter-based sauces with peas and ham; white sauces with not too strong flavour based on salmon and cream; sauces based on tender and soft cheese with saffron or curry additive.
