They come from Campania and belong to the family of very short straight cut noodles. In ancient times, fusilli were made by hand using a method passed from mother to daughter. It was about turning a spaghetti around a knitting needle with a very quick gesture and skillful hands, the kind of dexterity was very reminiscent of that of the spinners, and in fact the term "fusillo" derives from "spindle" tool that the spinners used. They are particularly tasty when prepared with both meat and fish sauces and ricotta-based sauces.
