From the family of short slanted striped pasta, Penne Rigate is one of the most famous pasta moulds and therefore also one of the most versatile in the kitchen. The term penne refers in the Italian language to the quill that was formerly used for writing and which was cut diagonally to obtain a fine tip. The format, obtained from a smooth or lined pasta tube of different lengths, has the characteristic diagonal cut typical of the writing pen. Penne are one of the few pasta moulds with a specific date of birth: in 1865, a noodle maker from San Martino d'Albaro (Genoa), Giovanni Battista Capurro, applied for and received a patent for a diagonal cutting machine. The patent was important because it allowed fresh pasta to be cut in the shape of a pen without crushing them, in variable sizes between 3 and 5 centimeters (Mezze Penne or Penne). The document kept in the Central State Archives of Rome states: "To date, the diagonal cut could only be done with hand scissors, a method that was not only too slow and expensive, but also had the disadvantage of producing an irregular cut and crushing into the pasta". Penne Rigates are perfect for preparing baked pasta or dry pasta seasoned with pork or beef sauces. They are also great for vegetable based spices and in general, precisely because of their versatility, for all traditional Mediterranean recipes, such as the classic spice with tomato, basil, extra virgin olive oil and a pinch of Parmesan.
